Thanksgiving Table: A Cooking Demonstration.

Autumn vegetables are the best, and they are perfect for Thanksgiving. Please join me for Thanksgiving Table — a live cooking demonstration at the Tucson Village Farm on Thursday, November 21 from 4:00-6:00pm. (REGISTRATION FORM) I will be showing attendees how to make three Thanksgiving side dishes that also double as main courses for our vegetarian friends. (There is nothing sadder than seeing a vegetarian at the Thanksgiving table with a plate of mashed potatoes and peas.)

The three dishes are: Farro and Delicata Squash Salad, White and Sweet Potato Gratin, and Sicilian Pumpkin Caponata. Many of these vegetables are available at the Tucson Village Farm Market on Wednesday afternoons from 4:00-6:00pm.

    How lovely! Beautiful dishes. I love that you put Gruyère on sweet potatoes. No marshmallows allowed! (That’s a motto in my house!)

    I don’t know any vegetarians but am certain these sides would be appreciated by everyone. I have fond memories of 4-H from my young teenage years, so glad you are supporting it for today’s generation of young people. You are a good guy, David!

      4-H is such an important program — and the Healthy Living Ambassadors is an amazing part, teaching young teens leadership, in addition to everyday skills. I wish you were here to join me!

    Congratulations on doing such great work David. All of those dishes look very good. It’s interesting I’ve never used farro, I lean towards burghul wheat for a healthy grain option, so I will be buying some farro, perhaps the health food shop. Also what a wonderful way to serve sweet potatoes. I’m by no means vegetarian, but I love vegetables cooked in interesting ways and caponata, yum. I see you receive the occasional promo comments too!
